Veggie Egg Cups


Ingredients:

  1. 12 large eggs

  2. Sea salt or Himalayan salt & ground pepper to taste

  3. 1(10-oz) bag baby spinach finely chopped

  4. 1 medium red bell pepper finely chopped

  5. 2 green onions finely chopped

Directions:

  1. Pre-heat oven to 375

  2. Lightly coat a 12 cup muffin tin with cooking spray

  3. Place eggs in large bowl and whisk to blend. Season with salt & pepper if desired

  4. Add spinach, bell pepper & onions and mix well

  5. Evenly pour egg mixture into muffin cups

  6. Bake for 15-20 minutes
