Slow Cooker: Buffalo Chicken


Ingredients:

  1. 2lbs. Boneless & skinless Chicken Breast

  2. 2 Carrots

  3. 2 Ribs of celery

  4. 1 Onion quartered

  5. 2 Cloves of garlic

  6. 1.5 cups Low sodium chicken broth

  7. Salt & pepper to taste

  8. 1/2 cup Buffalo hot sauce

Directions:

  1. Add chicken breast, whole garlic, whole celery ribs, whole carrots, onion & chicken broth to slow cooker

  2. Season with salt and pepper

  3. Cook on high for 4 hours

  4. Dispose of all but 1/3 cup of cooking liquid and all of the vegetables

  5. Shred the chicken using 2 forks

  6. Add the Buffalo sauce

  7. Let cook for 15 more minutes
