Morais Family Healthy Pancakes

My children love pancakes on Sunday morning! Up to now I have always just made them the Bisquick kind, with a few additions. The thing is my husband & I also love pancakes and in the quest to find one that we could enjoy somewhat guilt free I came up with this one that the whole family can enjoy. I am sure there are many more out there that can be considered healthier, cleaner, etc. I came up with this based on the ingredients I had at hand:
Organic Whole Wheat Flour
Organic Raw Sprouted Buckwheat Flour
2 eggs lightly beaten
1/4 cup Safflower oil ( can also use canola oil)
1 cup Organic Skim milk
1 Cup Unsweetened Coconut milk
2 tsp baking soda
1/2 cup wheat germ
orange jest
cinnammon
1 tsp vanilla extract
1/2 tsp of himalayan salt
1 tsp agave nectar
In medium bowl, mix eggs with oil & milk.
Stir in baking soda, wheat germ & four and mix until blended.
Pour or scoop batter onto heated griddle; brown on both sides flipping once. This made 10 pancakes.
I added fresh blueberries while they were on the griddle. At my children’s request I also added chocolate chips. Other additions you can do: Whey Protein powder, flaxseed, mashed bananas, fat free plain yogurt.
They were very filling & tasty and the critics (kids) loved them! My son even said I should open and restaurant 🙂
