I love pancakes! But I also love healthy and easy to make recipes, so when the pancake cravings hit I turn to this super simple recipe. If you are following the 21 Day Fix Nutrition Plan this recipe makes 3 small pancakes and it equals:
1 red 1 Yellow 1 Purple 1 tsp
1/2 cup old fashioned oats 1/3 cup egg whites Dash of cinnamon Dash of Vanilla Extract 1 tsp coconut oil 1 cup of berries (raspberries, blueberries, strawberries)
In a small bowl mix together oats, egg whites, cinnamon & vanilla extract.
Heat coconut oil in pan,griddle or frying pan. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Top with berries. No need for syrup! Seriously! And I love sweets, but the berries and coconut oil add a wonderful flavor to these pancakes.
