Crock Pot Lentil Chili


Ingredients:

  1. 1 medium onion, diced

  2. 3 cloves garlic, minced

  3. 1 jalapeño, diced, seeds removed

  4. 1 red pepper, chopped

  5. 1 yellow pepper, chopped

  6. 1 large carrot, peeled and diced

  7. 2 1/2 cups low sodium vegetable broth

  8. 2 (15 oz.) cans tomato sauce

  9. 2 (15 oz.) cans diced tomatoes

  10. 1 (16 oz.) bag brown lentils, rinsed

  11. 2 (15 oz.) cans small red beans no salt added, rinsed and drained

  12. 2-3 tablespoons chili powder

  13. 1 tablespoon cumin

  14. Salt and black pepper, to taste

Instructions:

  1. Place all ingredients in a slow cooker. Stir well to combine.

  2. Cover and cook on High for 4 hours or low for 6 hours. Serve warm.
