Banana-Apple Muffins


Ingredients:

  1. 1 1/2 cups almond flour

  2. 1/8 tsp salt

  3. 3/4 tsp baking soda

  4. 1 tbsp. melted butter, cooled

  5. 2 large eggs

  6. 1 cup mashed bananas

  7. 1/2 cup chopped apple

Directions:

  1. Preheat oven to 350.

  2. Combine the almond flour, salt and baking soda.

  3. In a medium bowl, whisk together the butter and eggs and then stir into the dry ingredients.

  4. Stir in the bananas and fold in the apple.

  5. Spoon batter into muffin cups (makes about 8-9)

  6. Bake for 18-20 minutes
